So I have these two cute friends who decided they wanted to support me in my diet. We said we would start on Monday, and that was that. I didn’t think about it again until I heard through the grapevine that one of my cute friends was struggling. So I called her up to chat. She had stopped eating grains and had turned to dairy, her poor tummy was hurting and she wasn’t feeling very well. Dairy is something I have a hard time with. I get a “tummy ach” when I drink milk, have ice-cream, or eat whipcream and yogurt. Most yogurt it is packed with sugar so I avoid it as well. I try to limit my dairy, however I do eat cheese and butter occasionally (don’t you dare judge me). So we chatted about cutting out the dairy and she asked, “so what do you eat?, There’s nothing left! I don’t want to sit and chop veggies all day.” So I started to tell her my tips and tricks and sending her pictures of my food. I thought I would share them with you as well.
This is a simple meal the was a hit at our house.
It’s just sliced ham and sweet mashed potatoes with shredded beets.
The sweet potatoes were so good and really easy; I just peeled the sweet potato then cut it into 2 inch chunks and boiled them until they were soft. Then I took 2 T cream cheese (you could substitute almond milk or coconut milk) and blended it all together. I added salt and pepper to taste.
The beets were cooked and shredded and I added a little butter and salt and pepper and they were done. You could use ghee instead of butter if you want.
This is one of my favorite lunch ideas.
I take romaine lettuce and stack a slice of turkey then bacon and sliced cherry tomatoes. Then I roll it up, it is so good!
We also like Zucchini Noodles and Meat Balls with Spaghetti sauce.
I just wash a zucchini and put it through a shredder.
Then I warm up aidells meatballs in some organic spaghetti sauce and that’s it.
